one stick butter (unsalted is better but not necessary)
6-8 sweet onions sliced 1/4 inch thick
brown sugar if needed
1/4 c flour
2 tsp Worcestershire sauce
64 oz. beef stock
6 beef bouillon cubes
1 chicken bouillon cube
salt & pepper to taste
garlic salt to taste
French bread sliced 1/2 inch toasted
8-10 sliced provolone cheese

Melt butter. Add sliced onion, cover pot stirring every couple of minutes; as onions turn golden brown stir and scrape bottom of pan; take off cover; taste onions add brown sugar if needed if the onions are not sweet.

Stir & scrape the mixture constantly until the onions are caramelized and deeply golden. The onions at this point should be a deep, dark brown. This is the critical moment and you cannot let the mixture go unattended at this point.

Add Worcestershire sauce then the flour. Continue to stir & cook like making a rue.

Add beef stock & bouillon; bring to boil them simmer; add spices to taste;
ladle soup into oven-proof bowls add bread and top with cheese ; place under broiler cook until cheese is bubbly. Enjoy!
