6 c. water
2 packets Goya Cubitos - powdered chicken bouillon
1 pkg. (12 oz.) Arborio Rice
1/4 c. freshly grated Parmesan cheese plus additional for garnish*
1/2 tsp. saffron threads (optional)
4 T. butter, in all
2 T. minced onion

Directions:
Directions:
In a saucepan bring the water and cubitos to a slow simmer. In a saucepan, heat 2 T. butter on medium high heat. Stir in the onion and cook for 3 minutes until soft. Stir in the saffron if desired, and cook for 1 minute. Stir in the rice and cook and stir for 1 minute. Add about 2 c. of the simmering bouillon, and stir continuously until all liquid is absorbed. Add 1/2 c. more bouillon and continue to stir until it is absorbed. Repeat the process, adding 1/2 c. of bouillon and stirring until the rice is done. It should have a creamy texture. Stir in the remaining butter and 1/4 c. cheese. Serve with additional Parmesan on the side.*Can be left out if not a cheese lover!
