8-9 lbs. fully cooked ham shank
whole cloves
1 1/4 c. brown sugar, packed
1 1/2 c. maple syrup
garnish with apple slices and orange slices and fresh flat leaf parsley

Slice skin from ham. Score top of ham in a diamond pattern making cuts 1/8" deep. Insert cloves in center of diamonds. Place ham flat side up on rack in a shallow roasting pan. Insert a meat thermometer in center of ham making sure it does not touch bone and fat. Bake at 325º for 2 - 2 1/2 hours or until meat thermometer registers 135 degrees. In a small bowl combine brown sugar and maple syrup. Stir well. Brush brown sugar mixture over the ham. Bake 20-30 more minutes until thermometer registers 140 degrees. Remove from oven. Let stand for 10 minutes before slicing. Garnish.
