1 lb. ground beef or venison
1/8 cup corn meal
1/2 teaspoon baking soda
3/4 teaspoon salt
1 cup corn meal
1/2 cup bacon drippings
1 can cream style corn
2 eggs
1 cup milk
1 onion; grated (I use dried; chopped onions from the jar)
Sliced jalapenos (fresh or from jar)....your preference!!!
1/2 lb. shredded longhorn cheese

Brown and drain meat; set aside. Put 1/8 cup corn meal in the bottom of a medium-size corning ware dish and brown in a pre-heated 350° oven. While the corn meal is browning in the oven; mix together 1 cup corn meal, soda, eggs, milk, canned corn, bacon drippings, and salt. Remove corning ware dish from the oven. Pour ½ the mixture over the browned corn meal. Then put all the meat on top of the mixture. Sprinkle the jalapeno peppers, onions, and cheese on top of the meat. Pour the remaining mixture over the top. Bake in the 350⁰ for 45 minutes.
