1 c green pepper strips
1 c sliced onion
1 1/2 lb. zucchini, sliced
3 T butter
3 medium tomatoes, peeled and chopped ( or canned diced tomatoes)
1 t salt
dash pepper
1 T cornstarch
1 T water
1/4 c Parmesan cheese

Directions:
Directions:
Preheat oven to 350º.
Sauté peppers and onion in butter. Add zucchini, tomatoes & seasonings.
Cover, simmer about 15 minutes.
Blend cornstarch in water to smooth paste. Stir into skillet.
Cook until thickened. Sprinkle with cheese and put in oven uncovered until cheese melts.
