1 refrigerated gluten free pie crust
1 lb ground Italian Pork Sausage
1 pkg of Mushrooms, sliced (optional)
1/2 c fresh parsley - chopped
2 large eggs
1 c evaporated milk or heavy cream
1/2 c Parmesan cheese
1/2 c shredded cheddar cheese
1/4 t salt

Directions:
Directions:
Preheat oven to 400 degrees
In skillet, cook sausage and mushrooms over medium heat until sausage is lightly browned. Drain fat. Stir in parsley and spread in pie crust

In bowl, mix eggs and milk. Stir in cheeses and salt. Pour over sausage mixture. Bake 25-30 minutes until top is golden brown. Let stand for 10 min.

Everyone loves this quiche. If gluten is not an issue a regular pie crust can be substituted.
