11/2 lb. hamburger
2 T oil
3/4 onion minced
4 cloves garlic minced
1 can tomato paste.
2 cans or 18 oz. water
1/2 can red wine then fill the rest with water
2 T brown sugar
1 T yellow mustard
1 T Worcestershire Sauce
3 T chili powder
1 ts. cumin
1 ts. celery salt
1/2 pepper
2 T paprika
1/2 salt - sea or kosher

In a saucepan place oil, garlic and hamburger that you have ground fine. Saute just a few minuets until it just starts to brown. Add 3/4 of the minced onion. The other 1/4 will be used on top of the hot dog and sauce at service. Cook and crumble until fine. Drain grease. Put into a saucepan. Add the tomato paste and 1 can of water. Mix to combine. Add mustard, and Worcestershire sauce. Combine chili powder, brown sugar, cumin and paprika. Add and let simmer for a minuet to absorb the flavors. Add celery salt, sea or kosher salt, pepper and 1 can of water with the wine and then the extra can of water. Mix together and lower the heat to simmer. Let simmer until it has reduced to the sauce consistency that you like. Mix occasionally while simmering. Should cook for about 1/2 hours to get to the correct consistency.
