1 can of fire roasted diced tomatoes
1 1/2 cups dry red wine
1 small bunch of fresh thyme
1 bay leaf
1 small onion diced
2 cloves garlic finely chopped
1 carrot diced
1 celery rib chopped
1-1/2 lbs beef stew meat

Directions:
Directions:
Use a little oil and brown the beef in a skillet or heavy dutch oven on the stove top. Then when its good and browned on all sides saute onions, garlic, carrot and celery. Once the vegetables are softened and slightly browned add back in the meat along with the herbs, tomatoes, and wine. Put this in a 285 degree oven and braise covered for 3 hours or so. (Longer time the better) It will be super tender and serve it along with some short pasta.
