1 1/2 c. egg whites
1 3/4 c. sugar
1 c. cake flour
1 1/2 tsp. cream of tartar
1 tsp. vanilla

Sift flour and 3/4 c. of sugar several times (at least 3 times) and set aside. Beat egg whites until foamy. Add cream of tartar and a pinch of salt. Beat until soft peaks form. Add 1 c. of sugar, a little at a time, beating well after each addition. Add vanilla and fold in flour mixture. Pour into ungreased angel food cake pan. "Cut" with knife several times to get the air pockets out. Bake in 375º oven for 35 minutes. Leave in pan till completely cool.

This recipe is from Hazel Perkins. Temperature may need to be adjusted. Don't use egg if any yellow is in the white because it won't beat up. If you beat by hand, use crock/metal/ceramic/glass container. Don't use plastic. Keep beater flat as you can and tilt crock so you put as much air in it as you can.
