1 jar Trader Joe Thai curry simmer sauce (Red, Green or Yellow curry)
1 lb Trader Joe's frozen seafood blend (shrimp, scallops, calamari)*
1 lb Trader Joes' frozen SHELLED edamame beans (not the frozen pods)
1/2 bag Trader Joe's frozen Melange a Trois (julienne red, yellow, green peppers)
1 tomato, cut into thin wedges
1 c rice (white or brown)

*Can substitute frozen salmon cut into chunks or cubed chicken.

Heat 2 c water just to a boil, and 1 c rice, return to boil, reduce heat to low and cover tightly. Simmer for 20 minutes (35 for brown rice) without lifting cover. Let steam for 5 more minutes. (NOTE: you can buy frozen cooked brown rice at Trader Joe's and skip this step)

Add simmer sauce to large frypan, saute pan, or pot. Add frozen seafood and edamame beans, heat over medium heat until seafood is cooked (about 10 minutes). Add frozen multi-color peppers (about 1/3 bag) and sliced tomato and cook just until heated through. Serve sauce over rice.
