1 whole skinless boneless chicken breast (1 lb.) or 1 1/2 c. cubed cooked chicken
2 tsp. honey
2 tsp. cider vinegar
1 c. mayonnaise
1 rib of celery, chopped
1 c. chopped unpeeled red apple
1/2 c. diced Swiss cheese
1/2 tsp. celery seeds
lettuce leaves for lining the plates

Directions:
Directions:
If using the uncooked chicken breast, in a saucepan, cover the chicken with water, bring the water to a boil, and simmer the chicken, covered partially, for 12 minutes, or until it is firm to the touch and just cooked through.
Transfer the chicken to a plate, let it cool, and cut it into 3/4" cubes.

In a small bowl, dissolve the honey in the vinegar and whisk the mixture into the mayonnaise.
In a bowl toss the cubed cooked chicken, celery, apple, cheese and celery seeds with the mayonnaise mixture and divide the salad between plates lined with the lettuce.
