32 ounces chicken broth (homemade or bought)
2 cups cubed cooked chicken
1/2 package (16 ou) frozen peas and carrots (more or less to your taste)
1 bay leaf (if not using homemade broth)
salt and pepper to taste
2 1/4 cups Bisquick baking mix (or equivalent)
2/3 cups milk

Combine chicken broth, chicken, frozen veggies, bay leaf, salt and pepper in a large pot. Bring to boil.
Mix baking mix and milk in a bowl until dough is sticky, but don't over mix or dumplings will be tough. Using a tablespoon, drop dough into the boiling soup. Take down to a simmer and let cook uncovered for 10 minutes. Then cover and let cook an additional 10 minutes. Don't lift the lid or dumplings will deflate.
