Directions:Directions: Layer ingredients in an airtight container in the order listed. (Mix can be made 3 months ahead. Store in cool dry place.)
Yield: 2 1/2 cups mix

Cranberry-Oat Pancakes
Serve the pancakes with maple syrup.
One recipe Cranberry-Oat Pancake Mix 2 eggs, beaten 1 1/2 cups buttermilk 1/4 cup unsalted butter, melted 1 teaspoon vanilla extract 1 tablespoon canola oil
1. Pour pancake mix into large bowl. Whisk in all remaining ingredients except oil until blended.
2. Lightly brush griddle or large nonstick skillet with oil; heat over medium-high heat until hot. (Or heat electric griddle to 375°F.)
3. Ladle scant 1/4 cup batter per pancake onto griddle; cook 1 to 2 minutes or until bubbles form and pop. Carefully turn pancakes; cook 1 to 2 minutes or until bottom is golden brown. (Keep pancakes warm in a 250°F. oven for up to 20 minutes.) |
