3 lbs. chicken, cut into pieces
7 cups water
6 carrots, cut into 1-inch pieces or sliced
3 celery stalks, cut in 1-inch pieces or sliced
1/2 onion, chopped
2 bay leaves
2 t. salt (optional)
1/2 t. coarsely ground black pepper
1/4 cup chopped parsley
1/2 t. thyme
8 oz. broad noodles

Directions:
Directions:
Bring all ingredients except the noodles to a boil in a large soup pot. Reduce the heat and simmer, covered, until the chicken is tender and cooked through, about 45 minutes.
Discard the bay leaves.
Add the noodles and return the soup to a boil. Reduce the heat and simmer, uncovered, until the noodles are tender, about 5 minutes.
Makes 6 servings.

I use boneless chicken cut into small cubes before cooking. You can use a cut up whole chicken, but you would need to remove the bones after cooking.
