1 1/3 c. flour
2/3 c. cornmeal
3 tsp. baking powder
1/2 tsp. salt
2 eggs
3/4 c. milk
2/3 c. maple syrup
1/4 c. shortening, melted

Directions:
Directions:
Sift flour, cornmeal, baking powder and salt together.

In a separate bowl, combine eggs, milk, maple syrup and shortening.

Combine liquid and dry ingredients and stir well.

Pour batter into a greased 9 x 9 inch glass baking pan. Bake for 20 minutes (or until inserted toothpick comes out clean) at 450º F.

When Rachael was in grade 4 she had Mr. John Garden as a teacher (now Fr. John Garden). When they were studying "Little House on the Prairie", John made the class corn bread from a recipe in the book. Rachael loved it so much that she came home with her request, "You've got to get that recipe, Mom, it's the best!!" So much for my corn/bran bread recipe, this one became the most popular in our household. Could it be the maple syrup???
