3 tablespoons Toasted Almonds
3 tablespoons Melted Oleo
1 cup Fine Vanilla-Wafer Crumbs
1 teaspoon Almond Extract
1 Half Gallon Vanilla Ice Cream
1 12 oz. Jar Apricot or Peach Preserves
1 8 oz. Carton Whipping Cream (Optional)

Directions:

Add melted oleo to crumbs, chopped toasted almonds and almond extract.
Mix well and put 1/4 cup aside.
Half of remaining crumb mixture is sprinkled over bottom of an eight inch square pan, lined with aluminum foil.
Half of ice cream is spooned over crumb mixture, then half of the apricot preserves. The process is repeated and the reserved 1/4 cup crumb mixture is sprinkled on top.
Put pan in freezer to harden.
