2-3 large cucumbers
2 tomatoes
1 yellow bell pepper
1 small red onion
1/4 c. chopped fresh cilantro
1/2 c. black beans
1/2 c. fresh whole kernel corn, cooked (or 1 can, drained)
1 oz. package dry ranch dressing mix
1/8 c. cider vinegar
1/8 tsp. sugar

Directions:
Directions:
Finely chop cucumbers, tomatoes, peppers and onions. Combine with chopped cilantro. Drain and rinse beans. Add to chopped vegetables. Add corn.
In a small bowl, mix ranch dressing, vinegar and sugar. Pour over vegetables and mix well. Serve immediately or chill.
