1 box Betty Crocker (keep supporting General Mills) yellow cake mix w/ pudding added
3 eggs
1/2 cup oil
1/4 cup water
1 cup 7-Up

1 small box strawberry Jello
3/4 cup hot water
3/4 cup cold water

Topping:
1 box sliced frozen strawberries
1 box vanilla instant pudding
1 container Cool Whip

Directions:
Directions:
1. Combine ingredients. Beat 3 minutes. Bake in greased and lined 9x13 pan in 350 degree oven for 30 - 35 minutes. Cool.

2. Prepare Jello and cool.

3. When cake is cooled, poke holes with blunt end of chopstick. Pour colled Jello over cake into holes. Slant cake as you pour to prevent Jello from dripping over sides. Place cake in refrigerator until Jello is set.

4. Thaw out frozen sliced strawberries, spread over cake, including syrup.

5. Mix together instant pudding with 1 cup milk. Mix in desired amount of Cool Whip. Frost over strawberries, some may show through.

This recipe comes from the Cosmos Music Parents Cookbook where I started my teaching career back in 1983. Jaci chose this recipe for her birthday cake one year and I made it for many years after. I would bring it to Immanuel Lutheran School on hot lunch day for her birthdays and I also made it and brought it to her on her 20th and 21st birthdays that we celebrated in Brookings where she was a student at SDSU.
