1 lb. chicken livers
1 onion, stuck with 4 cloves
1 C. butter, softened
1 T. Dijon mustard
1/2 tsp. nutmeg
2 T. grated shallots
2 T. cognac
2 T. truffles or substitute canned mushrooms, finely chopped
salt and pepper, to taste

Directions:
Directions:
Put livers and onion in heavy saucepan and add boiling water to cover generously. Simmer, covered over low heat for about 25 minutes. Remove and discard onion.

Drain livers and cream in blender. Cream together butter, mustard, nutmeg, and shallots. Add livers and cognac. Blend thoroughly until very smooth. Stir in truffles or mushrooms and season to taste.

Store pate in crock or container with tight fitting cover and chill well before serving.
