1.5 # unpeeled potatoes
Salt
2 Tbsp. Butter
2 Tbsp. Flour
1 1/2 Cups hot Milk
1/2 Cup Sharp Cheddar Cheese
1 Tsp. Parmesan Cheese, finely grated
1 clove Garlic, minced
Salt & Freshly ground Pepper
Topping:
1/4 Cup Sharp Cheddar Cheese
1 Tbsp. Parmesan Cheese, grated
Paprika

Directions:
Directions:
Boil potatoes until tender (or cook in the microwave al dente).
Peel potatoes & cut into 1/2 inch slices.
Layer in a buttered casserole.
Preheat oven to 350º.
Heat milk (microwave), add butter to melt, stir in flour until mixture is smooth.
Stir in cheeses and garlic.
If cheeses have not melted all the way or mixture seems thin, heat in the microwave for another minute or two.
Pour milk mixture over potatoes & sprinkle with topping, then paprika.
Bake 20 minutes, if not browned enough keep in oven or put under the broiler for a minute.
Serve immediately.
