Peanut Lime Vinaigrette
1/4 cup fresh peanuts
1/4 cup peanut oil
1/4 cup fresh lime juice (2 limes)
1/2 tbsp peanut butter
1 tsp sugar
1 tsp soy sauce
1 clove garlic (pressed or chopped)

Salad:
1 cup fresh dates
7-8 cups of mixed greens or lettuce
1 cup corn kernels (I buy canned)
1 can of black beans
1 avocado
3/4 cup feta cheese
1/4 cup peanuts
2 chicken breasts
1 tsp of oil for frying

Directions:

Peanut Lime Vinaigrette:
Combine all ingredients together adding the peanuts last (the peanut butter is easier to mix in without the peanuts). Be sure to stir directly before serving to avoid settling.

Salad:
Cut chicken into small bite size pieces and fry with favorite seasonings. Chili powder works best with this recipe.
Drain and rinse both black beans and corn.
Chop dates into small 1/4" pieces.
Slice or cube avocado
Placing lettuce in a bowl put all the ingredients on top. Pour on dressing. Top with chicken
