Sweet Potato Huevos Recipe

2 Lg Sweet Potatoes
2 T Chili Powder
2 T Olive Oil
Corn Tortillas
Cheese of choice
Black Beans
Cilantro
Eggs
Salsa
Avocado

Directions:
Directions:
Wash sweet potatoes and poke them with a fork. Microwave 5 minutes.
Cube sweet potatoes and toss in the chili powder (add salt to taste). Heat the olive oil in a cast iron skillet and fry the potatoes, tossing them occasionally to brown all sides.

Black beans can be canned or not ( I usually make this a day or two after cooking beans for some other purpose.) Heat on the stove.

Chop Cilantro and Avocado.

Warm the corn tortilla on a griddle, when hot sprinkle a bit of cheese, or make a quesadilla. Plate it, add a spoonful of black beans, a scoop of the roasted sweet potatoes, put a fried egg on it. Then top with Avocado, Cilantro and your choice of salsa (Emma likes mango salsa and it does compliment the sweet taters). Best throw it together dinner ever!
