1 spaghetti squash
1 lb. ground beef
1/4 cup parmesan cheese
1/4 cup bread crumbs
1/2 tsp. onion powder
salt & pepper to taste
1 tbsp. parsley flakes
1 - 2 tsp. red pepper flakes
1 egg, beaten
2 cloves garlic, minced
spaghetti sauce (jar or homemade)

Preheat oven to 375º. Carefully pierce the spaghetti squash several times. Place squash on a baking pan and bake 1 hour. In a med. size bowl; add Parmesan cheese, bread crumbs, onion powder, S & P, parsley flakes, red pepper flakes,and garlic. Add ground beef and egg mixing thoroughly by kneading with your hands. Roll meat into walnut sized meatballs, then sear in a frying pan until all sides are lightly browned. Move meatballs to a baking dish and cover with spaghetti sauce. Bake at 375º for 15 mins. or until cooked through. When spaghetti squash is cooked, remove from oven. Using a sharp knife and an oven mitt, cut open "at the equator" not lengthwise. Remove seeds and pulp and separate strands with a fork. Plate your spaghetti squash, then top with meatballs and extra sauce.
