1/2 lb. (2sticks margarine or butter softened)
1 cup firmly packed brown sugar
1 1/2 cups self rising flour
3 cups Quaker Oats (quick or old fashioned, uncooked)
1 cup raisins (optional)
1/2 cup granulated sugar
2 eggs
1 tsp. vanilla
1 tsp. cinnamon
1/2 cup finely chopped walnuts (optional)

Directions:

Heat oven to 350º

Beat together margarine or butter and sugars until creamy. Add eggs and vanilla: beat well. Stir in oats and raisins, mix well. Drop by rounded tbsp. onto ungreased cookie sheet, remove to wire rack. Approx. 8-10 minutes.

Bar Cookies: Bake 30 to 35 minutes in ungreased 13 x 9 inch metal baking pan.

In my teenage years I remember so dearly. of nights when it was just my sister Lisa and I in the kitchen late at night. She would ask me if I wanted her to make some oatmeal cookies. Of course I would say yes, knowing that hot tea would come along with it. I would watch her make these cookies & tea with admiration on my face just waiting for the cookies to come out of the oven. She would serve me hot cookies & hot tea almost on a nightly basis. All I can say is yum to the tum.
