2Tbsp. olive oil
1 medium onion, finely chopped
1 celery rib, finely chopped
1 medium green bell pepper, finely chopped
3 garlic cloves, finely chopped
1 tsp. dried oregano
1/2 cup white wine
28 oz. can diced tomatoes
2 tbsp. tomato paste
Pinch of sugar
1 bay leaf
Salt and freshly ground pepper to taste
8 medium-sized prawns, peeled with tail portion left intact
16 clams in shell
16 mussels in shell
8 oz. cod fillet, cut into small cubes
2 Tbsp. chopped parsley

Heat oil in a large skillet over medium heat. Add the onion, celery, bell pepper and garlic, cook until tender, about 5 minutes. Add the oregano, wine, diced tomatoes, tomato paste, sugar, bay leaf, salt and pepper.
Bring to a simmer and cook 10 minutes. Add the seafood and cook just until the mussel and clams open and the prawns and cod is cooked through. Sprinkle with parsley and serve
