1 lb can pumpkin (2 c) Also:
1 c sugar 1/2 stick margarine
1 tsp vanilla 1/4 c sugar
1/2 tsp salt 1/8 tsp cinnamon
1 tsp cinnamon
1/2 c flour
2 eggs
pinch of baking soda
1 can evaporated milk

Directions:
Directions:
Beat eggs. Add everything else. Melt margarine in casserole dish. Pour in the mixture. Mix 1/4 c sugar and 1/8 tsp cinnamon and sprinkle over top. Bake at 450º 25 to 30 min.

Custardy, brownish on outside, may crack, some wiggle in middle but will set.

If you like pumpkin pie without the crust, this is the ideal solution. It can also be eaten as a side dish for any meal.
