Ingredients:  
Ingredients:  
1 lb Pasta of choice. Linguine, Thin Spaghetti, Cavatapi ( my favorite), or Farfelle.
Salt for cooking pasta
3 - 4 pints Grape Tomato's rinsed, dried, & sliced lengthwise into a prep bowl.
1 large garlic clove, minced very finely
1tbsp Italian seasoning, Salt, Pepper to taste
1/2 to 3/4 cup good Olive oil
8 oz of grated Asiago , or Parmesan Reggiano
Fresh Basil from the garden (or you can get at store)
Italian Bread.

Directions:
Directions:
-Start large pot with 4 quarts of water to boil for Pasta. When at a rolling boil, add salt to water, then Pasta. Cook per package directions.

-While waiting for the pasta water to boil; wash, dry & slice tomatoes into prep bowl. Mince the Garlic & add to Tomato's.
-Add Italian seasoning, salt & pepper to taste to the Tomato's along with the Olive Oil & gently mix to incorporate together.

-Pour / spread Tomato mixture into a low rimmed baking sheet and pat out into single layer for Broiling.
-While the Pasta is cooking, Put tomato mixture under the Broiler.
Broil, about 7" - 10" from heat stirring and turning tomatoes over as you are occasionally stirring the cooking pasta.
-Tomato's are done when they are all getting a little brown.

-Drain Pasta, saving 1 cup of the Pasta water.
-Combine the Tomato's & Pasta in pan or bowl. Stir gently, season to taste
and use some of the saved Pasta water if mixture seems a bit dry. Add slivers of fresh sliced Basil.
-Serve with the grated cheese on the side & some hot Italian bread.

Personal Notes:
The longer you broil the Tomato's the richer they taste, just don' let them burn. Stir & turn often while broiling, it helps infuse the flavor into the Olive oil, Lower your rack if they seem to want to burn to fast.

Optional: Add a teaspoon of dried red pepper flakes to the tomato mixture before broiling to make a spicier dish.

Good paired with Italian Sausage for Non Vegans
