New Red Potatoes, 1 - 2 per person depending on size of Tater's
Olive Oil, or melted Butter or a combination of both
Salt & Pepper to taste.

Directions:
Directions:
-Wash & steam Potato's 18 - 25 minutes, depending on size until just fork tender. Do not overcook.
*Tip: Start covered on High heat until steaming & then turn down to medium or medium low depending on your BTU's.

-Preheat oven to 375º
-With tongs or spoon, place steamed potatoes on an oiled low rim baking sheet. Gently press down on each Potato with ball of hand using a mitt or a flat utensil (they will be hot) until they split & flattened out somewhat - don't over do it though.

-Drizzle or brush potato's with Olive Oil, Butter, or a combination of both.
Season to taste with Salt & Pepper.
-Bake on center rack until Potato's are brown & crispy on edges & tops for 20 - 30 minutes .
-Remove from oven & serve hot.
-These are delicious with Fish, Chops, Steak or solo for Vegans.

*Optional: Try sprinkling with Italian herbs & grated Parmesan; or Paprika before baking. Try topping with Sour Cream & some Chives-from the garden!

Degree of difficulty: Easy, even professed "non - cooks" can do these, you don't need a lot of ingredients & prep work is minimal.

This is a big hit at our home! If you have "Big & Hungry Grandson's" at home on College Breaks, I would suggest making extra!
