"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Directions:
Heat oven to 450 º degrees. Cut shortening into flour, sugar, baking powder and salt with pastry blender until mixture resembles fine crumbs. Stir in just enough milk so dough leaves side of bowl and rounds up into a ball. (Too much milk makes dough sticky; not enough makes biscuits dry.)

Turn dough onto lightly floured surface. Knead lightly 20 to 25 minutes, about 30 seconds. roll or pat 1/2 inch thick. Cut with floured 2 1/2 inch biscuit cuter. Place on ungreased cookie sheet about 1 inch apart for crusty sides. Place the biscuits touching on the cookie sheet for softer for softer sides on the biscuit.

Bake for 10 to 12 minutes until golden brown. Immediately remove form cookie sheet.

Personal Notes:
Personal Notes:
This is a fool proof recipe if you follow it to the T. I 've done cut and drop and it turns out perfect every time. Taken from my "Betty Crocker Recipe Book." I usuallyl cut the flour mixture & shortening using the tongs of a fork.
