10 1/2 cups unbleached bread flour
1/2 cup sugar
1 Tbsp salt
3 rounded Tbsp instant yeast (SAF)
4 Tbsp Liquid Lecithin (purchase at health food store or Kitchen Kneads or Bosch)
4 Cups hot tap water

Mix dry ingredients. Add lecithin (very sticky -make 4 holes in dry ingredients and pour lecithin directly from bottle into the holes), then add water. Mix for 1 minute. Check consistency - should be soft (it's better to be too wet than not wet enough - bread will be lighter). Mix another 5 minutes. Shape loaves and let raise 25 minutes. Bake at 350º for 25 minutes.

For whole wheat bread, use same recipe, but add 1 cup applesauce as part of the hot tap water to keep moist. Use same recipe for bread, bread sticks, pizza, calzone, cinnamon bread, cinnamon rolls, tortillas, scones, rolls, buns, soup bowls, etc. For things that don't need to raise, you can make right out of the mixer.

Roll out 1 loaf (about 10x14) visually divide into 3 rows. Cut 1 inch slices in the 2 outer thirds and leave the middle solid. Fill middle with chicken/broccoli/cream cheese; cream cheese/powdered sugar (1/2 c. each) and crushed fresh fruit or jam; or any other mixture, cross the 2 sides over the middle (like you are tying shoes)
Toppings for bread sticks and bread - Italian dressing seasoning, cheddar cheese powder, Ranch dressing mix.
Make pizza rolls like cinnamon rolls
Pizza - thin crust - roll out & put toppings on immediately. Thick crust - roll out and let raise 10 minutes. If you make bread today, but want the pizza tomorrow or next month, bake the crust today, then refrigerate or freeze. Bake pizza at 425º for 10-15 minutes - until cheese is bubbly and just starts to brown.
