½ pound asparagus
1 green pepper, chopped
1 small bunch green onion
1 stalk celery, finely chopped
½ cup veggie oil (lite)
½ cup red wine vinegar
½ cup sugar
2 cloves garlic (or more to taste) minced
¼ teaspoon paprika
pimento strips

Directions:
Directions:
Blanch asparagus in boiling water about 3 minutes depending on diameter of stalks and cool in ice bath.

Drain and lay flat in 9x13 glass dish.

Combine green pepper and next seven ingredients in glass bowl, stir well and pour over asparagus.

Cover and chill at least 2-3 hours (can be left overnight). Drain and garnish with pimentos.
