2 lbs. boneless/skinless chicken breasts
2 bay leaves
4 c. diced celery
10 ¾ oz. cream of chicken soup
2 c. mayo
2 c. sour cream
2 T. onion, chopped
2 T. lemon juice
2 tsp. salt
½ tsp. pepper
2 c. shredded cheddar cheese
8 oz. sliced mushrooms (optional)
2 cans (2.8 oz. each) French-fried onions

Directions:
Directions:
Place chicken in a Dutch oven and cover with water; add bay leaves. Bring to a boil. Cook uncovered until juices run clear. Remove chicken and cut into ½" cubes. Place in a large bowl. Add the remaining ingredients except cheese and fried onions. Transfer to a 9x13 baking dish (dish will be full). Sprinkle with cheese and onions. Bake uncovered @ 350º for 30 minutes or until heated through.
