2 lbs very lean ground beef
2-14 oz cans diced tomatoes with the liquid
6 oz can tomato paste

1 tbs cracked black pepper
32 oz beef broth
1/4 tsp cayenne pepper

Directions:
Directions:
Saute onions in olive oil til tender.
Brown meat, combine with onions.
Add all spices and mix well.
Add diced tomatoes and about 1/3 of broth.
Add tomato paste and mix well.
Add another 1/3 of broth slowly and stir well.
Simmer for 45 mins to 1 hour.
As broth reduces, add more broth to the consistency you like.

Personal Notes:
Personal Notes:
This is a pleasantly "mild" and flavorful chili. More cayenne will add more bite. We eat this by the gallon in the fall and winter. Use the toppings you enjoy. We always use grated cheese and crushed tortilla chips. Some may want diced onions, too.
