A prime rib roast.

Directions:
Directions:
Preheat oven to 375.
Meat at room temperature.
Salt & pepper - lots
On rack in shallow pan in oven.
Roast for 1 hour - turn oven off and DO NOT OPEN THE OVEN DOOR
After 3 hours, turn oven back on to 300 to warm up roast.

This will give you a perfect roast that is medium rare from edge to edge - not just in the middle. I had prepared using this technique several time and it was always perfect. Moved to a new home with a new oven. It has this "feature" so that when you turn the oven off, it starts to exhaust the heat out of the oven. That is great except I need that heat to continue cooking my roast. Now I need to find another way. Maybe the outdoor grill?
