"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
Sweetened fruit (I use about 3-4 cups)
1 cup flour
1 tsp baking powder
1 cup sugar
1/2 tsp salt
1 egg
1/3-1/2 cup melted shortening or cooking oil (I've also used butter)

Directions:
Directions:
Put some sugar on the fruit depending on what fruit and how sweet it is.
Mix dry ingredients and add egg.
Mix until the consistency of coarse corn meal.
Put the fruit in a baking dish and pour the dry ingredients on top.
Pour the oil on top.
Bake at 350 for about 40 minutes or until golden brown.

You may want less oil.

Personal Notes:
Personal Notes:
The great controversy: Shelton swears when using this recipe for peach cobbler that Mary did NOT add cinnamon. I've made it for him and he insists, no cinnamon. My opinion is that cinnamon and even some nutmeg compliment the peaches.
