Mediterranean Linguine Recipe

1 c sliced fresh mushrooms
1 med sized green pepper, seeded and cut into thin strips
1 med sized sweet red pepper, seeded and cut into thin strips
1 clove garlic, minced
1 (14 oz) jar marinated artichoke hearts, quartered
1/2 c Italian salad dressing
3 T sliced black olives (I like olives, so I just throw in a whole small can)
6 oz linguine, uncooked
1/2 c shredded mozzarella cheese

Directions:
Heat large skillet with a little bit of olive oil on med heat. Add mushrooms and next 3 ingredients; saute until veggies are crisp-tender. Add artichokes, Italian dressing and olives. Cook until heated. Cook linguine and drain well. Mix pasta and veggie mixture well and sprinkle with cheese. Serves 11 (or so they say! ha)

I often take just one chicken breast and grill it (just on a George Foreman for ease) and slice it diagonally and mix in with this - so delicious this way - thus a full meal.
