2 onion
4 carrots
2 sprigs fresh rosemary
2 fresh bay leaves
1 heaping tbl spoon flour
1 tbl each of tomato paste, grainy mustard and Worcestershire sauce
1 beef bouillon cube
1/2 cup pearl barley
8oz cremini mushrooms, halved
10oz sliced leftover cooked beef brisket
salt and pepper to taste
10oz puff pastry

Directions:
Directions:
1. peel and roughly chop the onions and carrots. Put them into a large saucepan with a big lug of olive oil. Add the rosemary and bay leaves. Cook for around 15 minutes with lid ajar, until softened, stirring occasionally.

2.Stir in the flour, add the tomato sauce, mustard and Worcestershire. Crumble in the bouillon and pour in 2 1/2 cups of boiling water.

3. Stir in the pearl barley, mushrooms and beef and leave simmering for 1 hour, or until the barley is cooked. Stir occasionally and add splashes of water if getting too thick. season to taste.

4. Preheat oven to 375 F. Transfer stew to a 10 x 12 baking dish.

5. On a flour dusted surface roll out puff pastry slightly bigger then dish and place on top of stew. Pinch edges to seal, score a cross in the middle, eggwash and bake 30 minutes until golden
