2 ½ pounds small red potatoes
1 yellow onion, sliced
3 T. olive oil
2 T. whole-grain mustard
Kosher salt
1 tsp fresh ground pepper

Optional topping:
fresh parsley, chopped or green onions, chopped

Directions:
Preheat oven to 425º. Cut the potatoes in quarters and place them on a sheet pan. Remove the ends of the onions, peel them and cut in ¼ inch slices. Toss the onions and potatoes together on the sheet pan. Add the olive oil, mustard, salt and pepper in a small bowl and whisk until combined. Pour evenly over the potatoes and onions and mix together on sheet pan. (I usually just do that step in a large bowl so I can evenly coat them).
Bake for 50 minutes to an hour, until the potatoes are lightly browned & tender inside. Toss the potatoes from time to time with spatula to brown evenly. Serve hot sprinkled with parsley or green onion if desired
