4 cups All Purpose Flour
2 cups Semolina Flour
2 Eggs
1 T Olive Oil
1 tsp Salt
1 cup Water

Directions:
Directions:
Mix all ingredients together in your kitchenaid with a dough hook. Dough should be very dry.
Place in a plastic bag and refrigerate overnight . Dough is easily rolled out with the pasta attachment. If you don't have one you can do it the old fashioned way. Hand cut, homemade pasta is delectable.

The Saturday before Christmas, grandpa Testa comes over and we make the Christmas pasta together. Before cleaning up my completely trashed kitchen, we make sure we have a little taste. This is a tradition that I wouldn't trade for anything.
