Small to medium pumpkin, cinderella pumpkins work best.

1 chopped onion

2 lbs. ground beef

2 cloves garlic, chopped

2 Tbsp. soy sauce

2 Tbsp. brown sugar

1 (4oz can) can sliced mushrooms

1 can cream of mushroom soup

1/2 cup cooked long grain, brown, and wild rice

1 (8oz) can water chestnuts, chopped up

Directions:

Wash the outside of the pumpkin and clean out the insides like you would a jack-o-lantern. Cut the lid on an angle so it doesn’t fall back inside.

Cook ground beef and onion adding garlic last minute of cooking. Drain grease. Mix in all other ingredients.

Put meat mixture in the pumpkin.

Set on cookie sheet and bake at 350 for about an hour, or until tender.

Eat pumpkin along with the casserole.
