1 1/2 c. converted rice
1 clove garlic
1/3 c.Pace picante Sauce
1/2 c. chopped onion
2 3/4 c. chicken broth, heated
2 T. vegetable oil
1 small carrot, peeled and finely diced (optional)

Directions:
Directions:
In large saucepan over low heat, cook rice, onion and garlic in oil until the rice is lightly browned, stirring frequently. Stir in hot chicken broth, picante sauce and if desired the carrot. Cover and simmer until all liquid is absorbed. About 20 minutes.

I switched to brown rice and like the nutty flavor. Also it is better for you.
