Cranberry Orange Jello Relish Recipe

One package (3 oz.) cherry jello
¼ tsp. salt
One envelope plain unflavored gelatin
¼ cup sugar
2 cups boiling water
One can (13 ½ oz.) crushed pineapple (1 ½ cups-DO NOT use fresh pineapple-jello will not set)
Juice of one medium lemon
*2 cups cranberry orange relish
One cup diced celery
½ cup broken walnuts or pecans (I use all pecans)

*Prepare cranberry orange relish
1-12 oz bag of fresh cranberries
1 medium orange, sliced into eights, seeds and ends removed
¾ cup to 1 cup sugar
Place cranberries and orange in food processor. Pulse until evenly chopped. Transfer to a bowl, stir in sugar to taste and set aside.

In bowl which will hold the entire mixture, combine cherry jello, salt, unflavored gelatin, and sugar; mix well. Add boiling water and stir until sugar and gelatins are completely dissolved. Add crushed pineapple and its juice, lemon juice, and cranberry orange relish. Stir to mix well. Pour into a 1 ½ quart dish or 9” square pan.
Set in refrigerator for a brief time until the mixture begins to thicken. At this point, stir in celery and nuts and turn into serving dish. Refrigerate until firm.

Grandma Yelton cut this recipe out of a newspaper in the 1960's (the original recipe still exists!) and it was a Thanksgiving staple at her house. It's been adapted over the years as some of the ingredients in the original recipe are no longer in production. Even with the changes, it still tastes like Grandma's.
