Salad:
Fresh spinach and arugula
1 fresh pear, cored and sliced into 1/2" pieces
2 oz. walnuts, chopped
2 oz. goats cheese, crumbled ( any flavors: plain, pepper, herb, fruit coated )
handful each of fresh parsley, cilantro and chervil
Dressing:
2 tsp. extra virgin olive oil
1 tsp. balsamic vinegar
squeeze of lemon juice
salt and ground pepper


Directions:
Directions:
Mix salad greens, pears, walnuts, goats cheese and herbs in bowl.
Mix dressing ingredients in glass pouring jar and adjust to personal taste.
Refrigerate dressing until ready to serve.

To serve: pour dressing over salad ingredients and mix well.

This is a lovely summer salad. When we lived in Lake County we would visit the farmers market that had locally grown pears, walnuts and goat cheeses. I would use other fresh ingredients such as grape tomatoes, red onion and whatever greens and herbs were available.
