Ingredients: Bottom Layer: 2 c. vanilla wafer crumbs 6 Tbsp. melted butter
Middle Layer: 24 caramels 1/2 c. whipping cream 1 c. chopped toasted pecans
Top Layer: 2 - 8 oz packages of cream cheese 1/2 c. sugar 1 tsp. vanilla 2 eggs 6 squares melted Baker's chocolate (milk chocolate or semi sweet)

Directions:For bottom layer, melt butter in a saucepan and add vanilla wafer crumbs. Press into a 9 inch springform pan that has been sprayed with pam on the bottom (or greased). Bake 10 minutes at 350ºF.
Melt the caramels in the top of a double broiler with 1/2 c. whipping cream and pour over the bottom layer. Sprinkle 1 cup of chopped toasted pecans evenly over the caramel layer.
For the top layer, beat cream cheese with sugar. Add vanilla, then eggs and beat well. Add melted chocolate. Mix and pour over pecan layer. Bake at 350º for 40 minutes. May be served with whipping cream. |
