Ingredients: 4 c. of flour 1/4 c. of white sugar 1 c. of raisins 1 tbsp. of caraway seeds 1 tsp. of baking powder dash of salt 1/4 lb. of butter softened + 4 tsp. extra for dotting 2 eggs 1 1/3 c. of buttermilk 1 tsp. of baking soda

Directions:Lightly butter and flour an 8" round pan.
Preheat oven to 375º.
Dry Ingredients (mix together) in a large bowl: 4 c. of flour 1/4 c. of white sugar 1 c. of raisins (any color) 1 tbsp. of caraway seeds 1 tsp. of baking powder dash of salt
Cut the softened butter into the dry ingredients.
In a small bowl, mix wet ingredients: Slightly beat 2 eggs Add 1 1/3 c. of buttermilk, lightly beat Add 1 tsp. of baking soda, lightly beat
Fold the wet ingredients into the dry ingredients and mix. If you have bread hooks on a beater, you can use them otherwise hand mix and use fingers to blend all ingredients. Do not over mix but make sure all the dough is moist.
Press dough into pan. Cut a cross into the bread to let the devil out. Dot each of four corners of the cross with a pat of butter.
Place in oven, turn temperature to 350º and cook for an hour. |

Notes: This 'family' recipe has been handed down three generations starting with my great-grandmother who came to America from County Clare, Ireland. Although I've been told she nicked it from a magazine. Either way, it's traditional Irish Soda bread and perfect for St. Patrick's Day.
