1 lb. Penne pasta
16 oz. sour cream (low fat is ok)
32 oz. cottage cheese (low fat is ok)
2 eggs (beaten)
1 ½ lbs. sweet Italian sausage, loose
½ to ¾ lb. Havarti cheese (grated)
1 lb. sharp Vermont white cheddar cheese (grated)
salt & pepper to taste
paprika  (sprinkled for color)

Directions:
Preheat oven to 350°.F
Cook pasta in salted water, drain and place in large bowl to cool ~10 minutes.
Brown loose sausage, drain and cool ~10 minutes.
Mix sour cream, cottage cheese, eggs and s&p.
Add pasta and sausage to sour cream mixture.
Combine Havarti and white cheddar.
Add cheese to pasta mixture (reserve ~1 hand full to place on top)
Butter a large pan, dump in mixture, top with reserved cheese & paprika. 
Bake at 350°  ~30-40 minutes ( longer if prepared ahead and refrigerated).

This recipe makes a lot and it freezes really well.

This was my mom's recipe, she had seen something similar and she decided to try it. She made it for us one Christmas and it became family tradition after that.
