Leftover cold chicken chili
8 oz. of sharp cheddar cheese
Goya empanadas shells

Directions:
Directions:
Mix cold chili with 8 oz of shredded cheddar. It should be thick. Blend together with an emersion blender. Roll out your Goya shells until they are very thin. Cut in half. Put 2 T of filling in middle of each half. Brush outer edge with water, fold over and seal with a fork.
Place on a baking sheet with parchment paper and bake for 20 minutes at 400 degrees.
Serve with salsa.
