4 large potatoes
2/3 cup butter
2/3 cup flour
1 1/2 qts. Milk
Salt and pepper to taste
4 green onions, chopped
1 cup sour cream
2 cups crisp bacon
5 oz. cheddar cheese

Directions:
Directions:
Microwave potatoes until soft. Melt butter in saucepan. Slowly blend in flour. Gradually add milk. Simmer over low heat stirring constantly. Cut potatoes in half. Scoop out the meat and set aside. Chop half of the potato peels and discard remainder. When milk mixture is hot, whisk in the potatoes. Add green onions and potato peels. Whisk well and add sour cream and bacon. Heat thoroughly. Add cheese. Garnish with chive, grated cheese and bacon.
