1 whole large chicken breast, skilled and boned
2 cups water
14 1/2 oz. can beef broth
14 1/2 oz. can chicken broth
8 oz. can chopped tomatoes
1 medium onion, chopped
1 small green pepper, chopped
12 oz. can whole kernel corn, drained
1 tsp. chili powder
1/2 tsp. ground cumin
1/8 tsp. ground pepper
Tortilla Chips
4 oz. Monterey Jack cheese
1 avocado - optional
Fresh Cilantro - optional

Cut chicken into small cubes; set aside. In a large saucepan, boil water. Add broth, undrained tomatoes, onion and green pepper. Simmer covered for 10 minutes. Add corn, chili powder, cumin and pepper. Simmer covered 10 minutes more. Top with cheese, avocado and cilantro.
