1 c sugar
T. Butter Softened
4 c flour
4 t baking powder
1 t baking soda
1 t salt
1/2 t freshly ground nutmeg
2/3 c buttermilk
1 t vanilla

oil for frying
sugar for coating doughnuts

Directions:
Directions:
Beat eggs and sugar until light and fluffy. Mix in the butter. In a separate bowl sift the flour, baking powder, baking soda, salt, nutmeg. Add the dry ingredients to the egg mixture, then add the buttermilk and vanilla. Mix until combined. Chill dough for at least 1 hour.

Heat approx. 3-4 inches of oil to 375º (a cast iron pan works well). Roll dough approx. 3/4 inch thick on a floured surface. The dough is tender so handle with care. Using a doughnut cutter or glass, cut the doughnuts.

Cook the doughnuts until golden brown, remove and place on a cooling rack. You can put sugar or cinnamon sugar in a paper bag and shake the warm doughnuts if desired.

These doughnuts are as close to Aunt Yvette's as I have found. Tender on the inside and crunchy on the outside. You can store the doughnuts for up to 1 month in the freezer as well.
